What timing! Starting after Labor Day, I'm going to have to be sending DD to school with lunch, and have been dreading thinking about it. I was thinking, "How am I going to get her to like & eat sandwiches between now and September 2?" Now I will instead copy your lunch packing routine to the letter. Thank you thank you! :)
snick, that's awesome. I don't have to think about packing lunches yet, but I am feeling like I'm in a rut here at home. This might sound a little dumb, but would you mind posting your spinach and rice/cheese casserole recipes? From reading about your cooking I think we have similar styles/tastes, and somehow decent casseroles (veggie, not too unhealthy) have always eluded me.
That doesn't sound dumb at all! I love casseroles, but struggle to find ones that fit the healthy, veggie, appeals-to-all category, too, and this spinach one is a winner. I'll try to get to it tonight.
I'll warn you, though, that there is a LOT of cheese in this one, so it's more "healthy" than healthy, if you know what I mean.
Love your lunch packing ideas. I wish I had been that organized when my older two went to JCC. It was hard enough having to pack lunch everyday, but on top of that it had to be kosher and due to allergies we couldn't send PB&J or other nuts. That got tough. I am so glad that baby K gets lunch at DC.
Your post has come at a perfect time for me! Although I'm in a little bit of a different situation than you... We have a 13 month old little girl and just had our second on the 31st. My husband goes back to work on Thursday and I've been trying to figure out a way to make it easier for me once he's gone. Making her meals ahead of time on the weekend seems like the best way to handle it! Thanks!
I love your ideas. I'm home full-time but I think I might do this anyway. It will help on the days when I'm just not feeling like super mom. (And that's usually 6 and a half days out of 7!)
I'm waiting impatiently for RI's first Trader Joes to open in the fall!
Thought this might interest you. I read her blog as well and it seems like you have similar nutritional interests. I am looking forward to seeing what everyone posts for the lunch ideas. It might not all be useful for your little ones, but some might.
